So if elemental is this age's random race, how the hell are there centaur and droben realms out there? I'd like a centaur realm for scumming. I kind of think its fucked up.

When you create a realm, you have the option "random". Which randomly selects a race out of ALL races, not just the ones available to pick manually.

I think you're confused by the random part. Each age has a special "guest" race, not a special "random" race. Besides the standard 3 races(human, goblin and elven), there is a guest race which makes it 4 possible races you can -choose- from. There is also the random choice which will randomly pick any of the possible 9 races.
